Oh, and bonus alert: it can all be made in 5 minutes and with just one pan, so cleanup will be a breeze. :)

Silvano Clementi is the owner and winemaker of Soc. Agr. Silvano Clementi and the Cantina Villa Persani in Pressano (Trentino Alto Adige).
A decade ago, he started his journey with one single vineyard producing Pinot Grigio. Soon after, he discovered great vineyards at the edge of sensible farming and decided to bring them to light. Vineyards capable of expressing the true essence of Trentino's terroir, such as Manzoni, Nosiola and La Schiava.
He also began experimenting with PIWI, fungi-resistant grape varieties, moved by the desire to innovate.
